Vegan Chocolate Cocoaroons
Ingredients
~ 2&1/2 Evolved signature dark vegan chocolate bars
~ 1/2 cup coconut oil
~ 1/2 cup pure maple syrup
~ 2 flax eggs
~ 1 tbsp vanilla extract
~ 1/2 tsp almond extract
~ 3/4 cup “flours” (1/2 of it almond flour and 1/2 of it oat flour)
~ 1/2 tsp sea salt
Instructions
~ preheat oven to 350 deg F
~ grease a mini muffin pan with coconut oil
~ in a double boiler, gently melt 1&1/2 of the chocolate bars with the maple syrup (I don’t have a double boiler, so I just used a big bowl that fit over a regular pot!)
~ remove double boiler from heat & allow to cool
~ then add flax eggs, maple syrup, vanilla, & almond extract. mix well
~ in a medium bowl, combine the almond flour, oat flour, & salt
~ add the wet ingredients & mix well
~ chop up the remaining 1 chocolate bar into little pieces, and stir it into the mixture
~ fill the mini muffin tins nearly to the top
~ bake 20+ minutes until golden / clearly darker and setting
they come out like little delicious, textured vegan chocolate confection!
Notes
**these tend to look super messy and spread all over the muffin tins from baking
*allow to completely cool in the pan & put in the refrigerator to set them further
