Summer Quinoa Salad

๐ฟ no oil
๐ฟ delicious on a big pile of spinach
๐ฟ great to have as leftovers to bring to work for lunch or to share at a cookout!
Ingredients:
~ 1 cup cooked quinoa (I cook mine in a rice cooker with veggie broth instead of water)
~ 1/2 cup cucumber
~ 1/2 cup tomatoes (I used mini sweet peppers because I didn’t have tomatoes)
~ 1/2 cup garbanzo beans / chickpeas (I used navy beans since that’s what I had)
~ 1/4 cup flat leaf parsley
~ 1/4 cup onion
~ optional: 1/2 cup olives
Dressing:
~ 1/4 cup tahini (next time I’ll use less … like around 3 tbsp total)
~ juice of 1/2 a lemon
~ 1 tbsp apple cider vinegar
~ 1 tbsp maple syrup
~ sea salt to taste
~ 1/2 tsp black pepper
~ 3-5 tbsp water
Instructions:
~ mix all the ingredients for the dressing together and set aside
~ cut up the vegetables
~ add all the remaining ingredients into a bowl & combine with the dressing
~ store in the refrigerator
