Snap Pea Salad with Zesty Lemon Vinaigrette
takes 15 minutes π«
Salad ingredients:
~ 4 cups finely chopped snap peas
~ 1/4 cup chopped fresh basil, or mint or tarragon (plus more for garnish)
~ 1/4 finely chopped dry roasted & salted pistachios, or any nut / seed (plus more for garnish)
~ (optional) 1/8-1/4 tsp crushed red pepper flakes
For the sauce:
~ 2 tbsp lemon juice
~ 2 tbsp olive oil or avocado oil
~ 1 clone garlic minced or grated
~ 1 & 1/2 tsp dijon mustard (check the label … some add sugar π«£)
~ 1 tsp maple syrup or honey
~ (optional) 2 tbsp finely chopped shallot
~ 1/2 tsp sea salt or more to taste
~ 1/4 tsp black pepper
Instructions:
π« in a large bowl, combine all of the sauce ingredients and mix really well
π« to the same bowl, add all of the salad ingredients
π« toss to combine and coat with the sauce
π« taste to adjust as needed, adding more lemon juice for brightness, or salt to taste
π« garnish with additional basil and pistachios and the red pepper flakes (optional)
π« serve right away!
