Butternut Squash Bread
My friend and I vamped on a couple recipes and ended up making a FANTASTIC butternut squash bread based on @melissas_healthykitchen’s “grain-free pumpkin pie bread”!

Ingredients
~ around 2 cups of baked butternut squash
~ 3 chia eggs (1 tbsp chia seeds + 2.5 tbsp water = 1 chia egg)
~ 1/2 cup coconut oil
~ 2/3 cup coconut sugar
~ 1 1/2 tsp vanilla extract
~ 1 tbsp pumpkin pie spice
~ 1 1/2 tsp baking powder
~ 3/4 tsp baking soda
~ pinch of sea salt
~ 2 1/2 cups almond flour
Instructions
~ In a large bowl mix wet ingredients with a handheld mixer
~ Add in dry ingredients and mix
~ Add batter to a lined loaf pan (we split them into a few mini loaf tins!)
~ Bake 350 F for 45-50 minutes or until a toothpick comes out clean
store it in an airtight container in refrigerator
🌿 it froze & defrosted really well too!
We made a double batch, and baked it in mini bread tins Which made them awesome gifts for neighbors, coworkers, hostess gifts for upcoming holiday parties … SO WORTH TRYING!
