Butternut Squash Bread

My friend and I vamped on a couple recipes and ended up making a FANTASTIC butternut squash bread based on @melissas_healthykitchen’s “grain-free pumpkin pie bread”!⁣

vegan 🌿

gluten free 🌿

grain free 🌿

super easy 🌿

🌿 Ingredients⁣

~ around 2 cups of baked butternut squash⁣

~ 3 chia eggs (1 tbsp chia seeds + 2.5 tbsp water = 1 chia egg)⁣

~ 1/2 cup coconut oil⁣

~ 2/3 cup coconut sugar⁣

~ 1 1/2 tsp vanilla extract⁣

~ 1 tbsp pumpkin pie spice⁣

~ 1 1/2 tsp baking powder⁣

~ 3/4 tsp baking soda⁣

~ pinch of sea salt⁣

~ 2 1/2 cups almond flour⁣

🌿 Instructions⁣

~ In a large bowl mix wet ingredients with a handheld mixer⁣

~ Add in dry ingredients and mix⁣

~ Add batter to a lined loaf pan (we split them into a few mini loaf tins!)⁣

~ Bake 350 F for 45-50 minutes or until a toothpick comes out clean⁣

🌿 store it in an airtight container in refrigerator⁣

🌿 it froze & defrosted really well too!⁣

We made a double batch, and baked it in mini bread tins 🌿 Which made them awesome gifts for neighbors, coworkers, hostess gifts for upcoming holiday parties … SO WORTH TRYING!⁣
