Blondie Mini Muffins
Ingredients
~ 2 cups of navy or great northern beans (for real!)
~ 1/2 cup raw peanut or almond butter
~ 1/4 cup pure maple syrup
~ 1/4 tsp baking powder
~ 1/4 tsp baking soda
~ 1/4 tsp salt
~ 2 tsp vanilla extract
~ 1 – 2 tbsp plant-based milk
~ (optional) sprinkles
Instructions
~ preheat oven to 350F
~ spray mini muffin tin with organic coconut oil or olive oil spray
~ place all ingredients in a food processor or blender (only use 1 tbsp of the plant-based milk a first, you can add the other if it’s still too thick)
~ blend until smooth, stopping to scrape down the sides as needed
~ fill the muffin cups 3/4 full
~ add sprinkles if using
~ bake for 16-18 min or until a toothpick comes out clean
~ let them cool a few minutes before transferring them to a cooling rack
~ makes 18 muffins, 1 serving = 3 mini muffins

Notes
I didn’t have any plant-based milk at home, so I subbed 1 tbsp almond milk yogurt + 1/2 tbsp water, and it worked perfectly!
